This beautiful geisha is by Shady Bader of Finca El Vergel or Black Mountain.
Shady and his brother Elias took over the farm and decided to convert part of their vegetable farm to grow coffee. They introduced Geisha and Java varietal into El Vergel and experiment various processing methods to create unique coffee profiles.
This geisha lot was expose to dry anaerobic fermentation for 48 hours and during the fermentation phase, mandarin orange juices was added to the anaerobic environment.
Thereafter, the coffee was placed on raised bed with dehydrated orange peel laid across the bed, drying at the temperature of less than 35C daily till the green coffee reaches the ideal moisture content.
We are amazed with the profile of this coffee and only manage to secure 24kg worth of greens. Try it to believe it! Amazing Coffee!
